Day 2: I'm Still Standing


Day 2 Meals:
Breakfast: Coffee with milk; 2 Lacey Edged Fried Eggs with 1 ounce cheddar cheese*
Lunch: Lentil Soup with 1 ounce cheddar cheese
Snack: ½ cup yogurt with 1 tablespoon wheat germ
Dinner: Turkey burger with 1/2 head cauliflower, roasted
Snack: 1 apple
Lentil soup for lunch.

*If you want to add cheese to the eggs, slice the cheese and lay it on top of the eggs after you have turned them over. Cover the pan and cook until melted.  


Day 3 Meals:
Breakfast: Coffee with milk; 1 cup yogurt with 2 tablespoons wheat germ
Lunch: Lentil Soup with 1 ounce cheddar cheese
Snack: 1/2 cup yogurt with 1 tablespoon wheat germ
Dinner: Turkey burger with 1/4 head  Roasted Red Cabbage
Snack: Apple with 1 ounce cheddar cheese


Lentil soup for lunch again. 


Day 4 Meals: 
Breakfast: Coffee with milk; 2 Lacey Edged Fried Eggs
Lunch: Lentil Soup with 1 ounce cheddar cheese
Dinner: Turkey Burger with 1/2 head Roasted Cauliflower
Snack: Apple with 1 ounce cheddar cheese


Recipe: Roasted Cauliflower 
These directions apply to almost any hard vegetable, including broccoli, red cabbage, Brussels sprouts, butternut squash.....
I am addicted to this with just salt and pepper but if you have them,  you can add thinly sliced or minced garlic, minced ginger, curry powder, turmeric, dried basil, chopped anchovies (not all at once) or anything you think goes well with cauliflower.

1/2- 1 head cauliflower, core removed, rest broken or cut into florets
1- 2 teaspoons olive oil
Kosher salt and black pepper 

Preheat the oven to 400 degrees. 

Place the cauliflower on a baking sheet in a single layer. Drizzle with the olive oil and sprinkle with salt and pepper. Place in the oven and bake until browned on the edges, about 35 minutes. Serve right away.

Even when I've had very little money I've never paid attention to food prices. I've tended to cut other, more frivolous, endeavors. I'm amazed at how expensive food is, how it all adds up so quickly and how stressful it is to worry about how long the money will last. 

I'm hungry all the time
but strangely don't think I am eating all that differently than usual. It's like being on a diet:  
you crave whatever is off limits.
